As a reformed, carb loader I’m always looking for healthier alternatives to the food I love. My goal is to make better decisions as far as nutrition goes but I never want to sacrifice taste. I love salads, but lets be real they get boring after a while. My belief that “healthy” food had to be bland and tasteless is what continuously caused me to start and stop diets for so many years. I finally feel like I’ve found ways to enjoy guilty free food without sacrificing taste. My obsession with cauliflower started about 2 years ago, cauliflower pizza, cauliflower mashed, cauliflower rice, buffalo cauliflower you name it I’ve tried and done it all.
Last year, I tried my hand at Cauliflower Mac & Cheese for Thanksgiving and Christmas. It was honestly just a way for me to make sure I didn’t over indulge in Holiday food and gain unnecessary weight but my family and I ended up LOVING it. I mean my family loved it so much that the small pan of Cauliflower Mac and Cheese disappeared before the traditional Mac and Cheese did. I’m no cook, I’ll be the first to admit that but my family does trust me with a limited amount of dishes that I’ve mastered and proven myself to be worthy to prepare. One of them is Macaroni and Cheese, I’ve prepared it for my family several times for events and holidays and even for my coworkers! I’m the self proclaimed “Queen of Mac and Cheese”.
As everyone is gearing up for the holiday festivities and dinners I’d thought I share my recipe to encourage you all to enjoy a low-carb Thanksgiving and Christmas dinner.
Ingredients:
Vermont Sharp Cheddar
Yellow Cheddar
White Cheddar
Muenster
Mozzarella
Gouda
Colby Jack
Cheddar Jack
Monterey Jack
Carnation Milk
1 stick of butter
(2) Heads of Cauliflower OR Cauliflower Florets
Instructions:
Chop 2 heads of Cauliflower (chop them smaller than florets but do not rice them)
Boil Cauliflower until soft for 25-30 minutes
Let Cauliflower sit for 20 mins
Periodically pat with paper towel to remove excess water
Cut small slices of butter stick and drop 4-6 pieces in the bottom of your pan (Naturally, cauliflower holds a lot of water and using too much butter will make your dish soupy)
Layer Cheeses and Cauliflower, start with Cauliflower at the bottom and rotate between layer of cheese and layer of Cauliflower
Add one can of Condensed milk
Bake at 350 degrees for 55-60 minutes (keep in mind you may need longer bake time if you use a lot of cheese)
